Perfect 1st day of October dinner

1- 2lb roast
3 cups of cut up potatoes
2 cups of cut up carrots
1/2 cup diced celery
1/4 cup of diced green peppers
1 tablespoon diced onion
1 package of McCormick Pot Roast Seasoning

enough water to cover the meat and veggies.  I had to use 5 cups because my roast is long and skinny instead of fat and chubby!  Cook on high for 4-5 hours or low for 8-9.  Perfect for the first day of October, even though it doesn't really feel like fall here.
